Japanese Fruit Sandwiches on child mags blog

Whip up this favourite Japanese treat that kids and adults will love!

In Japan, you can find these little fruit sandwiches in just about any convenience store. They’re a bit like a healthier version of the strawberry shortcake.

Serves: 4

Ingredients
8 slices very soft Japanese style white bread, or brioche
Strawberries, kiwifruit + mandarins, sliced
Sweetened Yoghurt Cream Ingredients
300ml thickened cream
50g icing sugar, or to your taste
300ml thick yoghurt

Method

Whip the cream and icing sugar to firm peaks and fold through the thick yoghurt.

Spread 4 slices of bread with a thick layer of the yoghurt cream and press the fruit slices into it. Cover the fruit with more yoghurt cream ensuring there are no air pockets, and then top each slice with the remaining bread.

Smooth the edges of the cream, cover with plastic wrap, and refrigerate for at least 15 minutes to firm the cream.

Using a very, very sharp knife, cut through the sandwiches to first remove the crusts to expose a cross-section of the fruit and cream filling, then to halve each sandwich into two smaller finger sandwiches.

Parent’s Tip: Use a very, very sharp, non-serrated knife to cut the sandwiches.
If the knife is not sharp enough, its pressure on the bread or the fruit will squeeze the cream out of the centre.
